Chocolate Cake

I’m not ashamed to say it. Actually, I’m very proud to say that I’m a “Betty Crocker” and “Duncan Hines” fan! A total addict! I love their butter cakes, their chocolate cakes, their cookie mixes, their many recipes you can find on their packages…ooh ooh, I love their frostings!!!! I love them! All I needed to do was add the eggs, the butter or oil, the milk…etc., and voilà. A rich and moist cake would come out of the oven! SIMPLE!

However, I don’t live in the US anymore. I live in Europe and lets face it. I can’t find these products unless my cousin sends them to me from the Netherlands (she can go to any military base and get them) or I can order them online and pay 10x of what the original price is in the US, or…I could…

BAKE ONE!…..FROM SCRATCH!

The thought of it sounded scary at first! I know I know, I can’t help it! Something about the flour (or the baking soda) that threatens my capability of actually making a good cake. It’s insane!

Now, finding a true recipe that will make you go bunkers, it’s another story. If you search online for a chocolate cake recipe, you will find millions…tons of different ways to make a chocolate cake… It’s best to narrow it down to your specifics that way the list gets shorter and shorter. In my case, I was looking for the traditional moist and thick chocolate cake recipe I have been accustomed to make with Betty Crocker and Duncan Hines with the exception of using 1 pan instead of making a layered cake. I got lucky! I found a couple of recipes where you can actually do it this way. But the 1 recipe that stood out from them all was from Epicurious!

I do hope you try this recipe for I believe you will enjoy eating it! (not the whole cake, I mean, I didn’t eat the whole cake, did I say I ate the whole cake?….no, no, no…well maybe a couple of slices, but not the whole cake!)

You need to coat it all the way to the top for it rises…all the way to the top!

I didn’t have chocolate shavings or sprinkles, so I made a Ganache, like the one posted in the recipe! Delicious! The lumps you see? Chocolate that my daughter added to the cake!

So yum yum! Can’t wait to make it again!

It lasted 2 days! Mind you…we are a family of 3!
