My first time making a BANANA CAKE!

I had so many ripe bananas that instead of throwing them away, I baked a Banana Cake! This recipe comes from http://allrecipes.com/video. Now, how can you go wrong?

Here are some step by step pictures, but I must confess, the video is 10x better!  Although the recipe calls for walnuts, I did omit them because I didn’t feel like having walnuts. What can I say, “some times you feel like a nut, some time you don’t”!

Let them cool for about 10 minutes. Then invert them. You can eat them just like that with a little bit of powdered sugar on top, or you can ice them with the traditional cream cheese frosting, or…venture into the unknown. How does a semi-sweet chocolate ganache sounds?

Here’s the recipe for the ganache: SIMPLE!!!!

  • 1 cup of double cream
  • 6 to 8 ounces of semi-sweet chocolate chips in a bowl, depending on how rich you want it. (You can also use semi-sweet bars)

Pour the double cream in a boiling pan in medium heat. When it starts to boil, remove it from the heat and put it aside. Take the bowl full of chocolate chips and pour it into the double cream. Combine well. That’s it. EASY!

I have to say, I’m glad I tried it this way. Otherwise, cream cheese rocks! I just love cream cheese with Banana Cake. NOTE: You can also use mascarpone cheese!
