Amaretti Biscuits!

I love Almond Biscuits. In deed, they are one of my favorite treats to eat! And you know? They always stroke me as something that would be really complicated to make, for some reason. Maybe the fact that they are Italian. Actually, they are the French version of Macaroons, yeah, it’s true. But hey! I think they are so easy to make (uhum), and look how great they turned out, (after my 3rd attempt!)!

Seriously now, they are not that hard to make, and you only need a few ingredients to make them come to life. I will describe here the steps and will demonstrate with pictures. However, I did get this recipe from the internet because the recipe I have to make Amaretti Biscuits is far more complicated than this one from “Eugenie Kitchen”. Thank you Eugenie!

The recipe calls for 5 ingredients: 

1 Egg White

75 grams of Castor Sugar

85 grams of Grounded Almonds

1/2 a teaspoon of Almond Extract

A pinch of salt

Preparation:

Preheat your oven to 200 degrees Celsius. Take the Egg White and beat it until doubled the consistency. Then add the sugar and combine. Take the Grounded Almonds and fold the mixture together with a spatula. Don’t forget to add the Almond Extract and the pinch of salt!

Now, with your hands, make small balls and place them in a covered parchment paper pan. Place them in the oven for 10 to 12 minutes.

And…you’re done! Finito!

They are chewy in the inside and crunchy in the outside. I have 2 biscuits in the morning with a cup of coffee….HEAVENLY, if you ask me!
